As expectations evolve, universities are faced with the challenge of presenting modern and competitive amenities. The University of Missouri sought to transform a tired dining hall into a market-relevant restaurant experience in the heart of its Columbia, MO campus. Within Sabai's immediate vicinity sit two residence halls housing over 600 students, as well as another nearby housing development accommodating 800. The space needed to serve challenging functional demands while remaining competitive both in quality and experience.
The guest experience was paramount to our team's design process. Sabai is a sophisticated and fresh take on what campus dining can be. The space is reminiscent of a neighborhood bistro or favorite café. The refined and soothing aesthetic program is inspired by the authentic South Asian fare served. Our team delivered a space wherein students want to be, both during mealtimes and otherwise. The functional layout and comfortable furnishings make Sabai a pleasant hangout destination between classes. In addition to the main seating, the space also includes a new service line, dish room, kitchen, outdoor seating, and an engaging demonstration kitchen.
