6 Points Restaurant Group developed the Commissary to provide gourmet Kosher prepared foods to its restaurant outlets, as well as the broader community through catering and food preparation for other commercial establishments. The commissary is a 14,000 SF facility with 3,000 SF for front office activities and 11,000 SF dedicated to dairy, parve and meat food storage, preparation, cooking and utensil washing. There is also a bakery that prepares a full range of standard and specialty baked goods. The front offices includes a reception and waiting area, food tasting and meeting room, chefs’ offices, management, sales and marketing offices. The food preparation areas house state-of-the-art commercial food service equipment including walk-in refrigerators and freezers, dish and pot washing equipment, cooking and baking equipment and storage systems for dry food and dining service supplies. The integration of mechanical, electrical, plumbing services in support food service operation was complex.
