In the early Edo period, many woodcutters engaged in the construction of Edo Castle lived in this area, and even today, there remain the Shimbashi Enbujo theater, Japanese-style restaurants surrounded by black walls, and geisha's huts.
In the quiet townscape, We received a request to design a Japanese restaurant that can embody the hospitality of Japanese cuisine centered on counter seats and carefully selected sake.
Kappo cuisine is not only a cuisine created from the chef's particular ingredients and techniques, but an important element is the interaction between the chef and the customer over the counter.
The space centered around the counter is designed with the intention of making each dish and interaction more brilliant by giving dimensions and lighting to the materials as a complement.
