Vaivén (in Spanish means swinging) was born from the restlessness of chef Amaranta Flores for having a space where her seasonal, fresh and honest cuisine concept was the starting point for the design. Developing the project from naming to construction was one of those unique opportunities where we were able to explore, propose and combine all the areas of the studio, resulting in a unique gastronomic proposal in Puebla, Mexico.
Working a project from scratch and getting fully involved in the whole process, involved a branding, architecture, interior design, & construction work that speaks the same language. Together with chef Amaranta's team we managed to create different atmospheres within the same experience, with a balance between functionality and hospitality.
Each space complements the culinary experience through the use of mexican design furniture
and materials produced in the region that pay tribute to the artisan process. The selection of bricks, floor terraces and woods, accompanied by the color palette and textiles, function as distinguishing elements in the spaces, generating a unique atmosphere in each one.
Vaivén´s swinging is reflected from the graphics, which transform its chromatic language and strokes at the same time that the menu changes seasonally.
Spatial design accompanies in its way these changes and generates three different atmospheres: between-orchards, main hall and terrace-bar.
The orchard is conceived as the soul of the project. This space designed in glass to be appreciated at the same time as functional, allows to harvest some of the ingredients that are part of the menu. Tables are distributed between its two structures for small groups of diners and private rooms that allow meetings. The use of neutral and warm shades in the color palette added to the furniture design in light woods and abundant vegetation enhances the concept.
The main dining room, designed with large tables, allows to seat large parties, emulating family meals around the open kitchen and bar in one intimate space that transmits warmth through the use of lighting and the combination of materials like clay, wood and fabrics.
Finally, on the outdoor terrace the mix of marble, granite and leather in finishes and furniture create a more contemporary and simpler atmosphere, which translates into a more youthful and informal space.
