Sliding panels, lamps coming down, plants popping up, and where did that piano suddenly go? Three times a day, restaurant The Shift changes both menu and interior. Even the staff's outfits change during the shifts and so does the lighting and fragrance. In the morning, The Shift is a trendy coffee and juice bar. In the afternoon a botanical lunch venue serving delicious flatbreads, and in the evening a colorful street food spot.
The completely different decors and menus make you feel like you’re in three completely different establishments at the push of a button. The shifts take place every part of the day at 11:30 a.m. and 2:30 p.m. and take only up to 1 minute. So there is something to enjoy every moment of the day and off-peak hours are a thing of the past.
Future friendly
The menu is entirely plant-based, curated by celebrity chef Bram Helleman, with the goal of accelerating the food transition without compromising on taste. All dishes have a nutritional score A-B and everything is packaged plastic-free. This reduces C02 emissions by 70%.
The Shift does not do pigeonholing: vegan to carnivore, everyone is welcome to enjoy the tasty food. The dishes are affordable and accessible. In this way, the need for vegetarian and even vegan food is credibly addressed without scaring people off. Enjoy loaded fries, bao buns, empanadas, gyoza and much more finger food.
Walkthrough
Walking down the Visstraat in Den Bosch, you can tell from a distance which shift is up and running. This is because the awnings on the facade go with the daily transition; yellow for the morning shift, green for the afternoon shift and pink for the evening shift. Upon entering, you walk right up to the ordering screens. The interactive menus show exactly what the current shift has to offer. The large screen on the back wall shows the status of your order.
The kitchen is made of oak with a terrazzo top that features the colors of the 3 different shifts. The front and back of the kitchen have automatically sliding panels that move with the shifts; white hand-baked tiles in the morning, brick in the afternoon and perforated metal in the evening.
In front of the kitchen, Studio Entr created an island with a wood floor and suspended ceiling. Both are accented by colored LED strips. At the front there is a low wooden bench with a soft back cushion, from the bench you look directly onto the cozy shopping street. On the other side of the island are half-height four-person tables, because of the height difference you look over the guests on the bench. In the middle of the island is a wooden box. A yellow bookcase rises from this box in the morning, a botanical garden in the afternoon and a neon work of art in the evening.
The back wall has a pleasant booth that provides a little more privacy, also the decoration of the booth changes throughout the day. Next to the booth is the waste station, guests sort their trash and dishes here. Through small back doors, the waste can be disposed of quickly which makes the station look tidy during the day.
Parallel to the facade is a long window table with upholstered stools, here you look out over the Dieze while enjoying the delicious food. Further along are 2 high tables, the best place to grab a bite to eat with your friends and watch all those mouth-watering people walking by.
Following the kitchen are two large picnic tables, this space is suitable for larger groups or informal meetings. The walls in this space also change during the shifts. In the morning, there is a yellow piano and a yellow cabinet with yellow books. In the afternoon, these are exchanged for a moss wall, and in the evening a colorful work of art can be seen here. On the opposite wall are two cabinets with Shift Goodies, such as a nice warm sweater or a recycled cup.
In short, a world first in the coziest town of Brabant, where good food always comes first and everyone contributes to a healthier planet. Enjoy The Shift!
