A public contest promoted by the City of León to occupy the historic Casa de Peregrinos is the origin of the refurbishment project for the new headquarters of Restaurante Cocinandos, a Michelin star since 2010.
An eighteenth-century palace, of two heights, adjacent to the church of San Marcos, which has hosted various uses throughout its existence, from hospedería to headquarters of the Procurador del Común, and which underwent a reform in 1992 of which resulted in a building with a very compact plant, full of pillars and with little visual amplitude that made it hardly compatible with the new proposed use. Thus, the main challenge we faced was to achieve an adequate visual and spatial breadth.
The main construction efforts focused on the correct qualification of the double height lobby. Moving from the original void, formed by a small square surrounded by eight solid columns, a greater gap was opened in the floor and walls were demolished, allowing a diaphaneity space to integrate and link all the elements and connections
The lobby is understood as the area that has to articulate the program and serve the different spaces it links. Conceiving itself as a threshold, a semi external space that connects the Plaza de San Marcos, from which it is accessed, with the rear garden. This aptitude is reflected in the change of pavement material, which here is made of stone. The central hole allows a set of visual connections between the two floors and highlights the spatial work that was carried out: a translucent wall on which the metal staircase rests becomes a business presentation letter and unifies the two heights.
In the design of the lobby, the careful study of circulations was also attended. Thanks to the design of pivoting glass doors, the connection of the two kitchens on the ground floor - the main one and the pass one - is achieved without breaking the visual connection and combining the circulations that are produced by the users between the interior and exterior of the building with that of the restaurant workers, which favors an efficient operation of the space.
The proposed spatial game is also nourished by the transformation of the geometry of false ceilings and the opening and recovery of historical gaps. In the ground floor dining room, by means of an origami exercise, the plane of the roof folds, generating numerous facets that make the space vibrate and endow it with a warmth and intimacy appropriate to the desired environment. At the same time, meticulous planning and a continuous dialogue with technicians and installers allowed the lighting and air conditioning installations to be accommodated in the limited space above it. The widening of the open spaces to the rear garden increases the connection with it and makes it a participant in the gastronomic experience. In the first floor, the false ceiling of the multipurpose room is formed by the folding of plasterboard sheets in a linear structure that produces calm and serenity.

The user experience was enhanced through the study of the views from the dining rooms of both floors. The choice of lighting and colors or the design of the auxiliary furniture. The presence of the back garden and the church of San Marcos was sought through the window openings. The coatings of the rooms were made with materials of soft colors, differentiating and giving their own personality to each space. In the lobby, together with the changing lighting of the polycarbonate wall and the brown and oxid colors with which the metal pillars and the wooden walls are covered, a correspondence takes place in the concave and convex forms of mentioned finishing.
The program consists of two kitchens, a cellar and the main dining room on the ground floor. The main kitchen has an independent access from the street and the grill area allows its view from the lobby. In the back garden the existing trees were maintained, realizing a new paving design and a corten steel and concrete closure. It is accessible from the kitchen, from the lobby and through the large holes in the dining room. The restaurant’s cellar is located on the way to the dining room and is configured as an independent island. The pass kitchen allows diners to observe the process of preparing the dishes from their table.
On the first floor, the program houses a kitchen directly connected to the ground floor by an independent stairwell, a large multipurpose room, a reserved dining room that takes advantage of the volume built on the exit to the garden on the ground floor, and all the services linked to its proper functioning. The accessibility of all the spaces is guaranteed by the installation of an elevator and a rigorous observation of the dimensions of the spaces.
