Stockholm-based architecture firm Blank have created an interior with an innovative set of custom furniture for salad bar Holy Greens, in Stockholm.
Located on Regeringsgatan, a few minutes from the Central Station, the restaurant is part of the ongoing regeneration of the area of central Stockholm that was torn down and rebuilt during the modernization frenzy of the 1950s and 60s.
Holy Greens goal is to deliver fast, healthy meals, from locally and ecologically produced ingredients. The restaurant introduces a smartphone app that lets the customer order their food in advance and pick it up hanging in a paper bag hanging from the Holy Wall, shortening queues and waiting times.
The design reflects the restaurant’s ethos of ‘simple ingredients combined in innovative ways’ to create an equally exiting eating experience. A limited palette of oak, green granite, metal, leather, concrete and greenery are combined to create a set of large-scale custom furniture pieces. Designed with the ambition of bringing people together in new ways they offer a wide range of spatial situations and seating possibilities in the 80 m2 restaurant.
The walls are lined with long oak and concrete benches and wall-mounted salmon pink tables. A two-tiered section create density and an elevated viewpoint. The community-style oak table features a tree at the centre and open grid shelves are used to subdivide the space using green plants.
The pre-existing terrazzo floor and concrete ceiling beams have been restored and give the space a distinct character and is contrasted with colorful green-rendered walls, pink stools, tables and green plants.
An outdoor seating area has transformed the sidewalk to provide guests with comfortable seating and protection from the busy street. The shape is derived from the adjacent pill shaped concrete planters lining the sidewalk. Carried out entirely in green painted steel, this sculptural addition to the streetscape integrates seating, tables and recycling into one elegant enclosure.
