The DA PASSANO project was born from a close collaboration between the architect and the client in order to create a new place dedicated to Corsican gastronomy.
Located on the port of Bonifacio, the place offers various atmospheres of culinary tasting, inside and outside, a bar, a removable scene for the arrival of a cappella singers and a deli-catessen of Corsican specialties.
The desire of the customer was to create a place combining Corsican tradition and moderni-ty.
GARDERA-D Architecture took part in the development of a global project ranging from the heavy architectural rehabilitation of the former butchery and shops, to the interior de-sign.
The restaurant opens fully on the Quai Comparetti through a wide facade of folding glazed aluminum sliding panels.
The main space develops within a volume in the form of a «cave» literally dug over time by hand of man under the cliffs.
One of the challenges was to be able to clean up the cave, suffering from humidity and de-void of ventilation and natural light, in order to accommodate a restaurant program. A «fake» cave made of staff was recreated, doubling the existing volume and allowing a tech-nical plenum integrating fluids, ventilation and dehumidification system.
