Alimento is a signature foundry for Chef Zach Pollack. Opened a decade ago as a high-level neighborhood trattoria, we re-envisioned Zach’s space as a contemporary, conceptual take on an alpine stube meets izakaya, an intimate wood clad eating and drinking house.
The challenge was to create a subtle fingerprint that deepens the experience, for both patron and chef. The color and cladding invites such deepening, intentionally transitioning from the front room, a light shell of tawny pine and modern wood coffer, to an immersive, inky watermarked band that envelops the bar, kitchen and high bench dining.
The result is a living still life, an enclave forever evolving through food and food appreciator. Earthy travertine and hand forged pendant lights in rust add to the living narrative.
