Zest is an all day dining restaurant located on the 2nd floor of the Conrad Seoul Hotel . Ascending from the hotel lobby, you enter a dazzling realm, where four separate kitchens at the center of the restaurant are encased in tall midnight black glass panels, counters and flooring in polished black marble, ceiling and lighting fixtures painted matte black, and even the suspended warming lamps are disguised with ebonized material. Food ingredients and freshly made delicacies are the only displays of color, creating a black box theater effect. Here, the food takes center stage and the creation process is thoughtfully choreographed. Creating food is the show!
The four show kitchens form a crossroads, where guests can meander through to browse food selections, communicate to the chef, and watch the cooking, enhancing the theatrical quality of the space. Upon exiting the passageways, guests are led to a nexus of dining spaces that surround the show kitchens at the center. Each space is designed to be unique, so guests can choose the space appropriate for their group size and gathering function. A narrow portion of the black glass has been deliberately left clear at the back of each kitchen, at such height that dining guests can see the kitchen activity through this thoughtfully framed view.
In contrast to the high theatrical effect of the center show kitchens, the dining quarters provide a soothing and welcoming atmosphere. We have overturned the convention that buffet counters should be located around the perimeter with the dining area concentrated in the center. Here, we have reversed this experience by placing the kitchens in the center to become the main focus and dividing the large dining area into smaller segments creating a residential scale and raising the privacy level of the dining experience. Guests can retreat to the surrounding space and duck away from the spotlight where they will feel less self-conscious and their dining experience can be more relaxed.
Two small enclaves just big enough for a mid-sized group of eight people is partially enclosed by patterned wood panels from floor to ceiling. Here, guests can hold their gathering semi-privately in their own oasis. A large dining room was designed with modulated tables that can be assembled to various sizes and movable partitions that provide separation. The space can function as open dining, semi-VIP or full-VIP simultaneously. This flexibility offers great operational ease and economical merit in Asian markets where large gatherings are very popular, especially in all day dining restaurants.
The décor is elegantly serene, sleek, and modern, yet tranquil; it offers a calm and perfectly balanced remedy to this high volume and fast paced restaurant. Black and white is the primary color scheme with the show kitchens in the center highlighted in black, and the surrounding dining areas largely furnished with white: the floor in white washed oak and seating in ivory faux leather. Black is used as an accent, such as black and white patterned fabric on pillows and chairs, black marble plinths, and delicate black metal inlays on the banquette tables.
The Conrad Seoul Hotel occupies one of the four towers in the International Finance Center (IFC) of Seoul, Korea, and is the first large-scale mixed-use development in this populated and long-standing financial hub. The complex is teeming with high-earning professionals seeking leisure and entertainment in addition to work. Naturally, the local business tenants and the weekend shopping crowds are expected to contribute a large share of the patronage to the food and beverage outlets in the Conrad Seoul Hotel.
